PRODUCTION<\/strong>
\nProduced 100% from Godello grapes from the DO Monterrei. Manual harvest, with pressing after destemming. The free-run must is statically settled and fermented in small stainless steel tanks at a controlled temperature not exceeding 15\u00b0C.
\nAfter fermentation and following the separation of the gross lees, the wine is aged on its own fine lees for two months. Clarification and amicrobial filtration are carried out before bottling.
\nTASTING NOTES<\/strong>
\nIn appearance, it presents a clean and bright yellow colour with greenish reflections. It is a wine of high aromatic intensity, with a predominance of floral aromas and white fruit such as pear and apple. More subtly, a citrus touch can be perceived.
\nOn the palate, it shows as a pleasant, smooth wine with balanced freshness, good structure and a very fruity profile.
\nPAIRING AND STORAGE<\/strong>
\nPerfect to accompany traditional and modern dishes. Ideal with Galician stew and white fish, but also enjoyed with more contemporary options such as salmon sushi, sea bass ceviche or fish tacos. It pairs exceptionally well with semi-cured cheeses such as a young manchego, as well as fresh cheeses like burrata or ricotta. It is recommended to serve between 14 and 16 degrees to bring out its qualities to the fullest.
