Founded in 1887, Cavas Hill is one of the oldest wineries in the Cava D.O. Stepping inside its modernist estate, whose listed architecture is deeply connected to the legacy of Antoni Gaudí, is to enter a unique way of understanding Cava.
Here, history, art, and tradition intertwine to create Cavas that reflect the Mediterranean character and identity of the Penedès region.
Origin and character
Cavas Hill’s cavas originate in the Alt Penedès region, in vineyards located in Moja/Olèrdola, where the influence of the Garraf breeze and the calcareous soils favor slow and balanced ripening.
Cultivated organically, with vines between 20 and 40 years old, these vineyards yield high-quality grapes that express freshness, balance, and elegance.
The traditional varieties—Xarel·lo, Macabeo, and Parellada—are hand-harvested at their optimal ripeness. Each contributes its character to the whole: freshness, structure, and balance, resulting in cavas that faithfully reflect the style of the Alt Penedès.
Traditional method
The base wine ferments in stainless steel tanks and, following the traditional method, undergoes a second fermentation in the bottle.
Aging continues on the lees in the underground cellars of Cavas Hill, where time imparts finesse, complexity, and a creamy texture.
The result is a range of young, Reserva, and Gran Reserva cavas that are organic, elegant, fresh, and balanced, authentically expressing the character of the terroir.
Tradition reinterpreted
The Panot Gaudí and Cuvée 1887 cavas reflect this history and the identity that defines Cavas Hill.
