With origins dating back to the 19th century, Can Sala represents one of the purest and most unique expressions of Cava in Mediona.

Owned by the Ferrer Sala family since its inception, this historic winery maintains a deep connection with the land and with time as an essential ally in the production of great, long-aged Cavas.

Here were born the last Cavas produced by José Ferrer Sala, whose legacy continues today through a philosophy based on the highest standards, respect for origin, and minimal intervention in the winery.

A legacy that endures

The story of Can Sala is part of the Ferrer family’s winemaking legacy, a tradition that dates back to 1616, when the family began their connection with wine at the La Freixeneda estate. The name Can Sala pays homage to the Sala family, deeply rooted in the viticulture of Mediona.

There, Dolors Sala Vivé, daughter of Casa Sala and wife of Pere Ferrer Bosch, began making cava in 1914, driven by a natural passion for wine. Granddaughter of the founder of Casa Sala (1861), she grew up among vineyards that were reviving after the phylloxera epidemic, developing from a young age a profound connection with the land and the art of winemaking. Her union with Pere Ferrer Bosch solidified a family tradition that has endured for generations.

Today, under the presidency of Pedro Ferrer Noguer, this legacy continues to live on at Can Sala, where respect for origin, the value of time and the pursuit of excellence continue to shape long-aged cavas that transcend time.

A unique setting in Mediona, Penedès.

Located in one of the highest areas of the Penedès region, Mediona offers exceptional conditions for producing great, long-aged Cavas.

Can Sala Cavas come from two historic vineyards in this area, cultivated organically and planted with old, low-yielding vines, dedicated exclusively to the production of Cava de Paraje Calificado (Qualified Single Vineyard Cava). La Pebressera, planted with Parellada, contributes freshness, precision, and remarkable finesse thanks to its altitude and orientation.

Clos de la Morella, planted with Xarel·lo, lends structure, depth, and tension to the wines. Both vineyards share clay soils and a balanced cultivation approach that allows the character of this terroir to be authentically expressed.

Artisan production and minimal intervention

At Can Sala, the winemaking process is deeply rooted in tradition and a profound respect for the wine. The harvest is done by hand, and the grapes are gently pressed in a century-old Dubois press, preserving the purity and expression of each plot.

Vinification is based on a philosophy of minimal intervention and natural settling, while aging takes place with natural cork stoppers. Each bottle is disgorged by hand, maintaining the authenticity, elegance, and character of these long-aged cavas.

Can Sala Cavas are distinguished by their exceptionally long aging periods, which reveal the full potential of the traditional Penedès grape varieties and the power of time to impart depth, complexity, and elegance.

Among them, Can Sala 2013 stands out, aged for 144 months on its lees and produced in limited quantities. It masterfully expresses the richness and complexity that only extended aging can achieve. Alongside it, Vinyes de Can Sala 2015, crafted as a Brut Nature and aged for over 120 months, displays a precise, vibrant profile with a clear commitment to longevity.

Furthermore, Can Sala maintains a wine cellar of historic vintages, allowing one to appreciate the extraordinary aging potential of these Cavas and the consistency of their style over time.

Can Sala opens its doors to a very limited number of visitors, offering private and exclusive experiences to discover the world of its Cava de Paraje Calificado (Qualified Single Vineyard Cava).
