Vintage 2021 – Rating: Very Good
A year marked by climatic contrasts that culminated in balanced ripening. After a dry winter and a spring with irregular rainfall, the September rains proved decisive, promoting healthy and well-formed grape clusters. Harvested between September 25 and October 19, the grapes showed excellent health, producing wines with great aromatic intensity and smooth, rounded tannins.
TASTING NOTES
Appearance: Bright garnet colour with medium-high intensity.
Nose: Complex and elegant. Notes of cocoa and vanilla dominate at first, giving way after aeration to ripe red fruit, liquorice and spices such as black pepper and clove.
Palate: Flavourful and balanced, with excellent harmony between acidity, tannins and alcohol. Medium persistence and a rounded finish, with a seductive touch that hints at its ageing in oak.
FOOD PAIRING
Ideal with red meats, stews or small game dishes. Also pairs well with cured meats, mushrooms, tataki, gourmet burgers and semi-cured cheeses. Serve between 16 – 18 °C and store in a cool, dark place.
