Made with the finest Xarel·lo and Parellada grapes, and aged for more than 120 months, this long-aged Brut Nature stands out for its depth, finesse and persistence.
Produced at our family winery in Sant Quintí de Mediona since 2012, this limited edition of just 6,000 bottles is a truly unique Cava. It combines 60% Parellada and 40% Xarel·lo, selected bunch by bunch from two low-yield vineyards over 75 years old, which bring elegance and structure, making them ideal for extended ageing. Grown at 340 m altitude, these low-yield vines guarantee the highest quality. Pressed in our century-old Dubois press, originally from Champagne, this allows the best to be extracted from each grape with a low but exceptional yield. The entire process follows a philosophy of minimal intervention, based on natural decantation.
TASTING
Intense yellow in colour, with a well-defined crown and fine, persistent bubbles, this Cava reflects its prolonged ageing. On the nose, it unfolds a complex combination of tropical fruit and ripe orchard fruit, complemented by subtle notes of pastry, yeast and toasted bread, adding depth and sophistication. On the palate it is broad and balanced, with a creamy texture and remarkable persistence. The aftertaste confirms its fruity character, leaving a long, elegant finish.
PAIRING
Tuna tartare with avocado, pan-seared scallops, baked sea bass with citrus, truffle and ricotta ravioli or a mushroom and aged cheese risotto, a perfect combination to enhance its elegance and complexity.
