Description
Can Sala 2008, a cava from a Paraje Calificado, is recognised by experts as one of the best sparkling wines in the world.
Can Sala 2008 is an exceptional Paraje Cava, made with grapes from low-yield, qualified vineyards and hand-harvested. Produced at our family winery in Sant Quintí de Mediona, with production limited to 4,000 bottles, of which around 700 currently remain. It combines 50% Xarel·lo and 50% Parellada, the latter from 75-year-old vineyards at 340 m altitude, which gives it elegance and finesse. The grapes are gently pressed in our century-old Dubois press, following a minimal-intervention philosophy based on natural decantation.
After 204 months of ageing in a horizontal position (“rima”), the integration of flavours reaches its fullest expression. The extended ageing on lees, the use of natural cork and the controlled conditions of our cellars give it a unique personality. Each bottle is disgorged by hand to preserve its purity and elegance.
TASTING NOTES
Golden yellow in colour, with fine, continuous bubbles that highlight its prolonged ageing, this cava presents a complex and elegant nose, with layered tertiary aromas, notes of ripe fruit, toasted brioche and subtle hints of French pastry. On the palate it is structured, with vibrant acidity and refined fruitiness, offering a silky, velvety finish with lingering memories of honey and buttery nuts.
PAIRINGS
Veal carpaccio with parmesan, oysters served plain, baked turbot with butter or an aubergine, goat cheese and truffle mille-feuille, or simply on its own, as a true masterpiece of time.
