Description
More than 12 years of ageing that elevate the elegance of Can Sala to its most complex expression.
Can Sala 2013 is our latest vintage, an exceptional Cava de Paraje Calificado, made with grapes from low-yield, qualified vineyards and hand-harvested.
It is produced at our family winery in Sant Quintí de Mediona, with a limited edition of just 4,000 bottles. It is made with a blend of 50% Xarel·lo and 50% Parellada, the latter from 75-year-old vines located at 340 metres altitude, which bring elegance and finesse. The grapes are gently pressed in our century-old Dubois press, following a philosophy of minimal intervention and natural decantation.
After 144 months of ageing on rima, the integration of aromas reaches its fullest expression. The long ageing on lees, the use of natural cork and the controlled conditions of our cellars give it a unique personality. Each bottle is disgorged by hand to preserve its purity and elegance. It is a cava that demonstrates the great potential of traditional varieties in long ageing processes.
TASTING NOTES
Golden yellow colour, with a fine, persistent crown that reflects its long ageing. On the nose it is fresh and expressive, with aromas of green apple and citrus, accompanied by elegant hints of toasted notes, brioche and almonds that add complexity. On the palate it is lively and well structured, with a balanced acidity that enhances its fruity character. Its creamy, delicate texture leads to a long, silky finish, with subtle memories of honey and nuts. An exceptional cava that masterfully expresses the potential of long ageing.
PAIRINGS
Mushroom and parmesan risotto, aged cheeses such as old Manchego, lobster or grilled langoustines, duck confit or magret, or free-range chicken with truffle.
