Description
A tribute to the Hill family, who in 1887 founded our winery, one of the oldest in the D.O. Cava, established at the height of the Modernist movement in our country.
Organic production:
This cava has been produced using the traditional method, with an organic base wine and a minimum ageing of 9 months in the bottle, which gives it its characteristic medium-aged brut style. The second fermentation in the bottle provides a fine and persistent bubble that highlights its freshness.
Tasting notes:
In appearance, it stands out for its brilliant straw yellow colour and fine, persistent bubbles. On the nose, it is expressive and harmonious, with delicate ageing notes blending with fresh aromas of grapefruit and green apple. On the palate, it offers a fruity, fresh and elegant profile, with a perfect balance and a soft white peach finish that leaves a refined sensation.
Pairing:
Perfect to accompany fresh ceviches, prawn tacos or sushi, as well as European classics such as oysters, foie gras or soft cheeses like Brie or Camembert, enhancing the gastronomic experience with its freshness and elegance.
Storage and serving:
Store upright, protected from light and air currents, at a temperature below 20 ºC. Serve at a temperature of 6-8 ºC to fully enjoy its qualities.
