Description
Winemaking
The grapes come from Can Esbert Single Vineyard, a century-old, bush-trained Macabeu vineyard planted on clay-limestone soils. After being harvested by hand into 10 kg crates, the grapes are kept in cold storage at 15°C for 24 hours before undergoing whole-bunch pressing, with a juice yield of 45%.
Fermentation takes place with indigenous yeasts in temperature-controlled stainless-steel tanks. The wine is then aged for eight months in a granite egg. This vessel encourages the natural movement of the fine lees, enhancing volume, texture and complexity while preserving aromatic purity, freshness and a particularly precise expression of the vineyard.
Tasting Notes
Bright yellow in colour with golden highlights. The nose is elegant and profound, revealing aromas of ripe white fruit, citrus peel, white flowers and Mediterranean herbs, complemented by delicate notes of fennel and a subtle mineral character.
The palate is broad and enveloping, with a silky texture derived from ageing on the lees in the granite egg. Vibrant acidity brings tension and balance, leading to a long, fresh and precise finish marked by mineral notes and remarkable persistence.
