Description
From the Orube “Los Molinos” estate in the Sierra de Cantabria, the process includes careful production that guarantees its quality. The manual harvest is carried out in small boxes, followed by a pre-fermentation maceration, alcoholic fermentation in individual tanks and malolactic fermentation in French oak barrels for 16 months.
VINTAGE:
The vintage was rated as very good. The weather conditions were favourable, with an atypically warm September that encouraged optimal ripening. The harvest showed moderate yields and an excellent sanitary condition. Furthermore, the drop in night-time temperatures at the end of the ripening cycle was ideal for obtaining grapes of exceptional quality.
PRODUCTION:
The harvest is carried out in small boxes to avoid breaking the berries and bunches. The grapes are then stored in cold chambers to optimise pre-fermentation maceration. Alcoholic fermentation takes place in small tanks, which encourages optimal maceration and extraction of aromas and colour, adding structure to the wine. Malolactic fermentation is carried out in barrels, with a total ageing of 18 months in new French oak barrels. Once bottled, the wine rests in the bottle to achieve the elegance and complexity desired in this Orube.
TASTING NOTES:
It displays an intense red colour with garnet hues. On the nose, it offers a complex, elegant and highly intense aroma, with notes of ripe black fruit, cocoa and liquorice. After a gentle swirl, spiced touches emerge such as black pepper, clove and thyme. On the palate it is intense, persistent and flavourful, with a predominance of black fruit and cocoa flavours.
PAIRING AND STORAGE:
Ideal to accompany dishes such as sirloin tataki, slow-cooked ribs, boletus and truffle risotto, caramelised pork belly bao or wagyu gourmet burger. It also pairs well with aged cheeses, game dishes or even dark chocolate. Store in a cool place (between 14 and 17 °C) and serve at a temperature between 16 and 18 °C.
