Description
Panot Gaudí is our tribute to Modernism and the identity of Barcelona. Its label reinterprets the iconic panot inspired by Gaudí, bringing together art, architecture and wine in a distinctive and iconic design. This vintage debuts a new presentation and organic certification.
It is a Cava de Guarda Superior crafted by a winery founded in 1887, one of the oldest in the D.O. Cava.
The grapes come from 20 to 40-year-old organic vineyards located in Moja (Olèrdola, Alt Penedès), where limestone soils and the cooling Garraf sea breeze promote slow, balanced ripening.
The Xarel·lo, Macabeo and Parellada grapes are hand-harvested at their optimum ripeness. The base wine is fermented in stainless steel tanks and, following the traditional method, undergoes a second fermentation in the bottle with a minimum ageing of 18 months on the lees in the underground cellars of Cavas Hill. This process develops finesse, complexity and a creamy texture. The result is an elegant, fresh and well-balanced organic cava that faithfully expresses the character of the Alt Penedès.
Versatile and food-friendly, it pairs beautifully with seafood, fish, sushi and contemporary cuisine.
TASTING NOTES
Appearance: Bright golden-yellow colour with fine, persistent bubbles forming a delicate mousse.
Nose: Fresh and expressive, with aromas of pear, kiwi and pineapple, complemented by citrus notes and a subtle floral touch.
Palate: Fresh and well-balanced, with ripe fruit flavours and lively acidity that provide elegance and freshness. Notes of mandarin and a delicate hint of anise lead to a smooth finish with subtle toasted bread and dried fruit nuances.
Store in a cool, dry place. Serve between 6 and 8 °C.
