PRODUCTION
The Sauvignon Blanc white wine is produced beginning with the grape harvest and its reception at the winery, preferably at night or in the early morning hours to avoid oxidation and preserve the aromas. The grapes are then destemmed and sent to maceration tanks for skin cryomaceration for 5 to 8 hours. The grapes are then pressed, separating the free-run must from the press must, the latter not suitable for high-quality wines. Alcoholic fermentation takes place at temperatures of 12-15 ºC for approximately 15 days. Afterwards, the wine is racked and aged for at least two months on its fine lees. This process allows the wine to balance, round out and soften, smoothing the bitter tones characteristic of the variety.
TASTING NOTES
It presents a straw yellow colour, intense with pale golden reflections. Its nose is complex and subtle, highlighting frank vegetal aromas such as hay and boxwood, accompanied by a background of well-defined exotic fruit such as lychee, apricot and passion fruit. On the palate it is intense, broad, flavourful, with medium acidity; weighty and smooth, very persistent, fresh and expressive with a long lingering finish.
