Description
WINEMAKING
The grapes are harvested at night to avoid high temperatures and potential oxidation. After destemming, the grapes undergo cold skin maceration for 5–8 hours to preserve their primary aromas, followed by gentle pressing and static settling.
Alcoholic fermentation takes place at a controlled temperature of no more than 14°C. The wine is then aged on its fine lees for four months, adding greater roundness and texture to the palate. Finally, it is clarified and filtered before bottling.
